You need to create a normal acceptance field in contact form 7 as a checkbox.(Note: It must be optional). Then choose this acceptance field slug in the settings. https://prnt.sc/rr83p3

You must create a acceptance field in contact form 7 then choose its slug in the GDPR dropdown option.
We have updated our documentation with GDPR option configuration. Please check it once.And you have to create checkbox custom field in your AC with same value that you created in contact form 7. Then assign it with custom field option in plugin.
